8 x cooking chorizo sausages (NOT the dried, pre-cooked ones)
1 x bottle GOOD cloudy cider (Old Rosie is a good one, but any cloudy one will do)
1 x large Spanish / brown onion
olive oil / fry light
Directions
- In a large pan, heat a small amount of olive oil or fry light over a medium heat and add the whole chorizo sausages. You’re looking to brown them off slightly and release some of their juices, but this may not happen initially, don’t panic.
- Thinly slice the onion and add to the pan, softening and browning slightly but not too much. Around 4 or 5 minutes should do it.
- Add the cider and then simmer on a relatively high heat with a lid on for around 15 minutes, or until the onion has softened completely and the chorizo is almost cooked. You should see the cider reduced quite a bit now too, but still a lot of liquid in the pan.
- Remove the chorizo and cut the sausages on a slight angle. Return back to the pan and continue simmering with the lid off until the liquid reduces down to a syrupy consistency.
- Once you get to this point, remove from the heat, and serve immediately with warmed bread for mopping up the juice or as part of a tapas night.
