Cod and Chorizo
Simple and quick recipe which tastes amazing. Cod and Chorizo go so well together, but you can replace with other fish.

4 Chorizo Cooking sausages (not pre-cooked)
2 good size cod fillets, cut into 2″ squares or so
Tablespoon Dijon mustard
Peppery Salad (Watercress, Rocket etc)
Directions
- Slice the chorizo into chunks a similar size to the cod pieces
- Put the chorizo into a pan on a medium heat and fry. Once they start to release some oil into the pan, then add the cod and fry until the fish is just starting to flake
- Place some salad on a plate and season with salt and balsamic vinegar if you have it.
- Remove the cod and chorizo from the pan and serve over the salad, keeping the juice in the pan.
- Add the Dijon mustard to the juice in the pan and stir in, then pour over the cod, chorizo and salad and serve.
