I’ve been wanting to make some spicy ribs for a while now, and these bad boys were immense!
FireCrackin’ Boozy Hot Ribs

8 x Large meaty pork ribs (not the small back ribs)
1 tbsp crushed dried chillies
- Marinade
5 tbsp Brown Sauce (spicier the better)
5 tbsp Red Sauce (not too sweet)
50ml Brandy or Bourbon
1 tbsp English Mustard
1 tbsp Dijon Mustard
1 tbsp honey (set or runny, makes no difference)
2 tsp Hot Paprika
1 tsp Garlic Granules
1 tsp Piri Piri chilli powder
Directions
- Pre-heat the over to 160C
- Line a deep baking tray with foil and lay the ribs out on it
- Mix all of the ingredients for the sauce together in a bowl. Pour this over the ribs and mix together to make sure they are thoroughly covered. If you want to baste them afterwards then keep some of the sauce back
- Place foil over the top of the baking tray and then place in the centre of the over for around 2 hours or so. After this time, remove the tray from the oven and remove the top layer of foil. At this point, you can either baste the ribs with the sauce you had left over or you can simply mix them around in the tray. You want to ensure the ribs are covered once again in sauce
- Set the oven to 200C and then place the ribs back in for a further 10 minutes to caremalise the sauce. Again, you can baste with more sauce if you have it after 5 minutes or so.
- Remove the ribs from the oven, and lay out on a plate. Drizzle any of the sauce from the tray over the top, and then sprinkle with the dried crushed chillies. Leave to cool for a few minutes (this helps the sauce go sticky and means you don’t burn your fingers eating them) and tuck in!
