Salmon Stir Fry
Really quick and healthy stir fry recipe that tastes amazing and is really good for you!

2 or 3 large skinless, boneless salmon fillets
2 Pak Choi
220g Green Beans – sliced into 1″ pieces
250g Asparagus – sliced into 1″ pieces
3 or 4 large spring onions – sliced into 1″ pieces
1 x Red Pepper – roughly cut into chunks
1 x Orange Pepper – roughly cut into chunks
1 x red chilli – sliced
1 / 2 garlic cloves, chopped
3 tbsp stiry fry oil
2 tbsp chinese five spice seasoning
salt
300g fresh rice noodles (not dried)
handful fresh coriander
Directions
- Dice the salmon into 2″ pieces and sprinkle with the chinese five spice, ensuring the salmon is completely covered.
- In a wok, heat the oil on a medium heat and add the longest cooking ingredients first. I would suggest adding the garlic, green beans, and the peppers. Stir fry for a few minutes until they start to colour and soften.
- Add the salmon and stir fry for a few minutes to coat in the oil etc.
- Add the asparagus, spring onions and chilli and stir fry for a further few minutes, keeping an eye on the salmon. Don’t stir too roughly or the salmon will break up. Add the salt at this stage too
- Finally, cut the bottom from the pak choi, and then cut straight through to make around 2″ sections and add to the wok. Stir fry for a few more minutes until they soften slightly.
- Finally add the noodles and the chopped corriander. Stir fry for a few minutes and then serve
